Christmas Recipe #2 Mom's Vegetable Soup

It is great on a cold winter day served with some warm fresh bread. It is a quick any easy recipe.

Mom's Vegetable Soup

16 ounce package frozen garden vegetable blend

1 onion, chopped

4 potatoes, peeled and diced

46 ounce can tomato juice

3 cups water

1 tablespoon oil

1 teaspoon salt


Combine all ingredients in a large soup pot. Bring to a boil over medium heat; boil for 20 minutes. Reduce heat and simmer for one hour. Soup will thicken as it simmers. Makes 4 to 6 servings. I found it depends on on the juice I sometimes add extra water to thin it out.
